Italian Pasta with Tomato & Basil

Prep: 20 minutes

3 cups chopped tomatoes

1 cup Kraft Shredded Parmesan, Romano, and Asiago Cheeses, divided

1 Tbsp. sliced fresh basil

1 clove garlic,minced

2 Tbsp. olive oil

3 cups (8 oz.) bow tie pasta, cooked, drained

Mix tomatoes, 3/4 cup of the cheese, basil, garlic and oil. Add to hot pasta in large bowl; toss to coat.

Sprinkle with remaining 1/4 cup cheese.

Makes 4 servings.

Basic Crepes

Prep Time: 10 minutes

Cook Time: 20 minutes

Ready In: 30 minutes

Servings: 4

INGREDIENTS:

1 cup all purpose flour

2 eggs

1/2 cup milk

1/2 cup water

1/4 teaspoon salt

2 tablespoons butter, melted

DIRECTIONS:

1. In a large mixing bowl. whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter, beat until smooth.

2. Heat a lightly oiled griddle or frying pan over medium high heat.  Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe.  Tilt the pan with a circular motion so that the batter coats the surface evenly.

3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Grilled Chicken and Veggies Over Rice

Makes 4 servings

Preparation Time 15 minutes

Cook Time 30 minutes

What You Need

2 tbsp.  margarine, melted

4 tsp. Italian seasoning

2 1/2 lbs. chicken parts

2 zucchini and/or yellow squash, sliced

1 medium red bell pepper, seeded and quartered

1 medium onion, cut into 1/2 inch thick slices

1 pkg. Knorr Rice Sides Cheddar Broccoli

How To Make It

Step 1

Blend margarine with Italian seasoning; brush on chicken and vegetables.

Step 2

Grill or broil chicken and vegetables until chicken is thoroughly cooked.

Step 3

Serve chicken and vegetables with hot Cheddar Broccoli Rice.

Stalk Celery

1/2 can of tomatoes

Frozen vegetables

4 Tbsp. beef bouillon

1 cup flour

1 lb hamburger

1 stick oleo

1/2 gallon ( 8 c.) water

Pepper

1 cup carrots

1 c potatoes

Make white sauce using 2 of 8 cups of water. Add everything except meat.  Saute meat in 2 tablespoons of oleo. Drain off grease; add to mixture.  Simmer for 1 hour.

1/2 lb. hamburger or sausage

1/2 lb. bacon

3/4 cup onion, chopped

Can of pork and beans

Can of kidney beans, drained

Can of lima beans, drained

Can of butter beans, drained

1/2 cup brown sugar

1/2 cup sugar

1 teaspoon salt

1/2 cup catsup

1 teaspoon dry mustard

2 Tablespoons vinegar

Brown hamburger and bacon; drain. Add onions and beans. Add brown sugar, granulated sugar, salt, catsup, dry mustard, and vinegar. Put in casserole dish and bake in 350 degree oven for 40 minutes.

1 lb pound ground beef  or turkey

2 (12 oz.) cans refried beans

1 pkg Cheddar Cheese

1 Pkg. taco seasoning

Flour tortillas

Mix ground beef and refried beans with taco seasoning; warm on stove. Roll mixture in flour tortillas; add cheese on top of mixture in tortillas. Bake for 10 to 15 minutes until cheese is melted.

Breakfast Fried Potatoes

Easy skillet fried potatoes.

Ingredients:

  • 4 cups potatoes, diced
  • 1 cup chopped onions
  • 4 tablespoons butter
  • paprika, to taste
  • salt and pepper, to taste

Preparation:

Cook diced potatoes in boiling water for about 4 minutes, until just a bit tender but not cooked. Drain potatoes and toss with onions. Heat butter medium heat in a heavy skillet; add potatoes and onions. Fry, bringing potatoes up from bottom of pan with a spatula occasionally for even cooking and browning. Season to taste with paprika, salt and pepper.
Serves 4. Easy skillet fried potatoes.

Evaporated Milk

Evaporated milk is milk with half of the water removed by a special vacuum process. Evaporated milk can be used in place of milk in most recipes. Evaporated milk can be used undiluted for a richer flavor or diluted to a texture and flavor similar to fluid milk. If a recipe states “evaporated milk” do not dilute. To dilute evaporated milk: Mix 1 can evaporated milk with one can of water. Or mix amount needed with the same amount of water. Example 1/2 cup evaporated milk plus 1/2 cup water.

Cream Soups
White sauces in casseroles
Cheese sauces
Scrambled eggs
Scalloped Potatoes
Mashed Potatoes
Cooking hot cereal
French toast/pancakes
Smoothies
Blender drinks
Omelets
Pudding
Caution: Evaporated milk should not be used in place of infant formula.
Cream Soup
Mix can of soup with evaporated milk to make a cream soup. If the soup is too strong to your taste, mix 1/2 cup evaporated milk and 1/2 water.
Hot Cereals
Use evaporated milk in place of one-half of the water for a smooth and creamy hot cereal.

Cheese & Olive On Rye

1 cup cheddar, grated
1 cup ripe olives, chopped
1 cup dried beef, chopped
1 cup mayonnaise
Mix all together. Spread on party rye and put under broiler until bubbly. (About 5 minutes.) Delicious and easy hors d’ouerve.
